Inspired by the traditional Gouda recipe, its name ‘Kern’ is the Cornish word for ’round’ and suitably describes its shape and flavour. The king of Italian cheese.. but some are better than others.
The Cravero family has specialised in maturing Parmigiano in Bra since 1855. This rare two year old ‘mountain’ cheese has impeccable regional provenance. Handmade in the Appennini Hills with the raw milk of a small herd of less than 100 cows. The finest cheeses are selected by Giorgio and taken to Bra for ripening.
At two years its texture is moist and succulent, with complex fruity, caramel, milky sweet notes. This delightful reggiano is also rich with tyrosine or rather those little crystallised bites of crunch that we love.

This French breed of cow produces milk that is distinctive for its high butterfat, and is the secret behind classic French cheese as Camembert and Pont L’eveque. The beautiful Suzette is creamy like no other with a lingering savoury note on the palette. As a washed rind it is has a lovely cabbagy aroma. Yum Its lovely striated exterior reveals a luscious cream line beneath its pale washed rind.
