The Young Ones
Delicate, fresh and creamy.

Also known as fresh cheese. These cheeses are made from fresh curds that haven’t been pressed. They generally have shorter lives.
They are just the most to experience on their own but are also a tremendous asset in the kitchen for your favourite recipes.

These delightful cheeses are distinctive for their soft sometimes wrinkly ‘fuzzy’ white rinds. They will be mushroomy and cultured in flavour and include those dreamy triple creams we adore so. They are young and decadent and can be made using a variety of milk types.

The Smelly Ones
Washed Rind Cheeses – little stinkers: Clever monks.

Mostly surface ripened soft cheese, these woofty, ancient, monkish tradition, cheeses are bathed in brine and sometimes booze to activate additional surface cultures.
They may be smelly, but their interior reveals a smooth, decadent, creamy, sweet flavour and dreamy silky texture. Distinctive for their unctuous aromas and deluxe creamy notes.

The Blues
The bold and the beautiful.

These marbled cheeses are a tremendous invention. They may be soft and creamy, or crumbly in texture and sharper and salty in flavour, but all are inoculated with Penicillium roqueforti. A natural culture that allows the cheese to form divine veins or pockets of delicious salty blue, giving these amazing cheeses their pleasing umami flavour. Just heavenly.

The Supple Ones – Semi-hard Cheese

The Hard Ones
Glorious hard cheeses.

These cheeses may be made of many milks types and are defined by their age and their magnificent depth of flavours. Their curds are cut finely and cooked at high heat which maximises the amount of moisture that’s removed, increasing the intensity of flavour- capturing the milks finest qualities.
Because of the reduced moisture of these cheeses, they can be matured for much longer. This develops their signature attribute – tyrosine, or crystals of protein – which gives these magnificent cheeses those beautiful crunchy, bites, texture. Bliss.
